Our cold cellar works along a system of ventilation and humidification to relax the flesh and its intramuscular tissues. The natural fats of the meat spread around the meat which becomes more tender, rich in flavors and aromas.
The American Black Angus that we serve is 100% pure race. It is raised in open air, in the “Prairies”, in the U.S. The beasts receive a very controlled alimentation, exclusively made up of grass and cereal-based diet for 100 days to give the flesh a very tender and fine taste.
