Maturation is a very precise and thorough process. It is used to emphasis the savors of our excellency meats. Our cold cellar works along a system of ventilation and humidification to relax the flesh and its intramuscular tissues. The natural fats of the meat spread around the meat which becomes more tender, rich in flavors and aromas.

The American Black Angus that we serve is 100% pure race. It is raised in open air, in the “Prairies”, in the U.S. The beasts receive a very controlled alimentation, exclusively made up of grass and cereal-based diet for 100 days to give the flesh a very tender and fine taste.

The Galicia is a race raised in the Northwest of Spain, next to the Atlantic Ocean. It is a very robust race of beef, with a high intramuscular concentration et a lightly spicy and saline taste. The beasts are exclusively feed with grass and plants that only grow in the area, in a vast and quiet open-air space, to reduce the stress and guarantee at the same time a particularly relaxed and savory meat.

Cooking and degustation advices

  • Leave the meat at room temperature for 2 or 3 hours before cooking
  • Before cooking: Season to taste with salt and pepper on both sides
  • Cook the meat rare – 3 to 5 minutes (advised)
  • After cooking: let the meat relaxed for 5 minutes before savoring it
